What Goes Inside
Turkey-and-Cheese Pinwheels
- 1 small whole-grain tortilla
- 2 ounces lean, lower-sodium turkey
- 1 slice of cheese
- Lettuce or spinach, if desired
Apple Crunch
- 1/2 small Honeycrisp or Pink Lady apple, sliced
- 1 tablespoon peanut butter
- Nut-free option: sunflower-seed butter
Colorful Veggie Side
- 1/4 cup cucumber slices
- 1/4 cup carrot sticks
- 2 tablespoons hummus
Drink
- Water or an unsweetened beverage
- Pack a refillable bottle when permitted by the school
Pack the Lunchbox
SIMPLE STEPS FOR A COLORFUL, SCHOOL-READY LUNCH
1. Build the pinwheels
Layer the turkey, cheese, and optional greens over the tortilla. Roll tightly and cut into four pinwheels.
2. Prepare the apple
Slice half of a small apple and place it beside one tablespoon of peanut butter or sunflower-seed butter.
3. Add the vegetables
Fill the remaining compartments with cucumber slices, carrot sticks, and hummus.
4. Keep it cool
Add water and place the lunchbox in an insulated bag with an ice pack until lunchtime.

School-Day Notes
- Nut-free schools: Use sunflower-seed butter instead of peanut butter.
- Food safety: Keep turkey, cheese, hummus, and cut produce cold with an ice pack.
- Carbohydrate reminder: Check the tortilla, apple, vegetables, hummus, and spread labels. Calculate the total using the child’s individualized meal plan and insulin instructions.
- Low blood sugar: This lunch is not intended to treat hypoglycemia. Follow the child’s prescribed low-blood-sugar treatment plan.
