FROM THE KITCHEN
Let’s make it.
Five easy steps to a bright, cozy dinner.
01. Get everything ready.
Heat oven to 425 F. Line a baking sheet with parchment. Pat salmon dry. Thinly shave the Brussels sprouts and prepare the oranges.
02. Stir up the citrus glaze.
Mix 1 tbsp olive oil, honey, orange zest and juice, smoked paprika, cumin and garlic powder. Add half the salt and a little pepper.
03. Roast the salmon.
Set fish on the baking sheet and brush with glaze. Bake about 12–15 minutes, depending on thickness, until the center reaches 145 F.
04. Warm the Brussels.
While fish cooks, heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add shaved sprouts and remaining salt; saute 5–7 minutes until tender-crisp.
05. Make it beautiful.
Remove sprouts from heat. Fold in orange segments, pomegranate and parsley. Divide among four plates and place salmon over each serving.

KITCHEN NOTE
For food safety, check the thickest part of the salmon with a food thermometer. Do not reuse glaze that touched raw fish.
SMART SWAPS
LESS ADDED SUGAR
Omit the honey; use extra orange zest for fragrance.
NO POMEGRANATE?
Try diced tart apple for a fresh crunch.
CHANGE THE GREENS
Swap Brussels sprouts for shredded green cabbage.
Why this fits Healthy Bites: Salmon provides protein for tissue maintenance and repair, while citrus and Brussels sprouts offer vitamin C, used in normal collagen formation. Food supports wellness; it is not a substitute for medical wound care.
