Ingredients

For the chicken

  • 1 pound boneless, skinless chicken breast, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 tablespoon no-salt-added taco seasoning
  • Juice of 1 lime

For the bowls

  • 4 cups chopped romaine lettuce
  • 1 can low-sodium black beans, rinsed and drained
  • 1 cup corn, thawed if frozen
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, diced
  • 1 avocado, sliced
  • ¼ cup chopped cilantro
  • Lime wedges, for serving

Easy Greek-yogurt crema

  • ½ cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1–2 tablespoons water
  • Pinch of garlic powder

Directions

  1. In a small bowl, stir together the Greek yogurt, lime juice, water, and garlic powder. Add a little more water if needed until it is thin enough to drizzle. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken, taco seasoning, and lime juice.
  3. Cook for 8–10 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  4. Divide the chopped romaine among four bowls.
  5. Top each bowl with chicken, black beans, corn, tomatoes, red onion, avocado, and cilantro.
  6. Drizzle with the Greek-yogurt crema and serve with a lime wedge.

Make It Your Own

  • Want a little more spice? Add chopped jalapeño or a dash of hot sauce.
  • Need a vegetarian option? Skip the chicken and add extra black beans or chickpeas.
  • Want to stretch the meal? Add a small scoop of brown rice or quinoa.
