Sweet Potato Nachos with Guacamole

A colorful twist on classic nachos with oven-roasted sweet potato rounds, savory beef, and fresh toppings.

00
  • 4 sweet potatoes
  • 2½ tablespoons olive oil
  • 1 pound ground beef
  • 1 cup salsa
  • 1 teaspoon smoked paprika
  • ½ cup fresh cilantro
  • 1 cup guacamole
  • 1 lime
  • A pinch of salt and pepper, to taste
  1. Preheat the oven to 375°F. Slice sweet potatoes into thin ⅛-inch rounds. Toss with half the olive oil and a pinch of salt. Spread in a single layer on baking sheets and roast about 25 minutes, flipping halfway through.
  2. Heat the remaining olive oil in a skillet over medium-high heat. Add the ground beef and season with salt and pepper. Break it up and brown for about 4 minutes.
  3. Stir in salsa and smoked paprika. Continue cooking for 5–7 minutes, until the beef is fully cooked and the liquid has reduced.
  4. Chop the cilantro and cut the lime into wedges.
  5. Arrange the sweet potato rounds on a platter. Top with the beef mixture, cilantro, guacamole, and a squeeze of lime.
