If you're a fan of chili, we have a treat for you: a low-carb version of the classic beef and bean chili that doesn't skimp on flavor.

Our revamped recipe retains the warm, hearty essence of chili without those extra carbs and fat.

The beauty of this recipe is its adaptability. Want even fewer carbs? Swap half a pound of beef for one can of beans. In the mood for more veggies? Add diced zucchini when sautéing the vegetables. If you're looking to simplify the cooking process, after step 3, let your slow cooker take over for 2-3 hours on low.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 stalks of celery, diced
  • 1-1/2 pounds 85% lean ground beef
  • 3 tablespoons chili powder blend
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt or 1/2 teaspoon table salt
  • 1 can (14-ounce) pinto or pink beans (not drained)
  • 1 can (14-ounce) black beans (not drained)
  • 1 can (14 ounces) crushed or pureed tomatoes
  • White vinegar (for taste)
  • Toppings: grated cheese, sour cream, chopped red onions, and hot sauce


Note: Ensure you're using a chili powder blend, which typically contains cumin, garlic, and oregano, as opposed to pure chili powder.

Take advantage of their peak by giving them a starring role in a versatile spinach, feta, and cucumber salad. It’s well-known that fresh strawberries play well in spinach salads.
